Ingredients

  • 2 teaspoons instant coffee granules or espresso powder
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream

  • ½ cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon instant coffee granules (optional)

Instructions

  1. Prepare the crust:

    • Preheat your oven to 325°F (160°C).
    • In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined.
    • Press the mixture into the bottom of a 9-inch springform pan to form a crust. Bake for about 10 minutes, then remove and let cool.
  2. Make the cheesecake filling:

    • In a large mixing bowl, beat the softened cream cheese until smooth.
    • In a small bowl, dissolve the instant coffee granules in 2 tablespoons of hot water, then add to the cream cheese mixture.

  4. Prepare the coffee topping (optional):

    • In a mixing bowl, whip the heavy cream with powdered sugar and instant coffee granules (if using) until soft peaks form.
